Apple Cider Donut Bread

Ingredients:
Bread
· 1 cup Trader Joe’s Spiced Cider (or your favorite brand)
· 2 large eggs at room temperature
· 1 ½ Tbs vanilla extract
· ½ cup unsalted butter, softened
· 1 cup light brown sugar, packed
· ¼ cup unsweetened applesauce
· 2 cups all-purpose flour
· ¼ tsp baking soda
· 1 ½ tsp baking powder
· ½ tsp salt
· 1 ½ tsp ground cinnamon
· ½ tsp nutmeg
· ½ tsp ground ginger
Topping
· 1/3 cup granulated sugar
· 1 Tbs ground cinnamon
Preheat oven to 350 degrees. Grease and line a loaf pan with parchment paper. Reduce cider to ½ over medium heat, stirring frequently, and cool. While cider is cooking, combine flour, salt, baking soda, baking powder, and spices in a mixing bowl. Cream butter and brown sugar in mixer for 2-3mins, or until light and fluffy. Add eggs, one at a time, combining each well. Add vanilla to mixer and combine. Once cider cools, add it to the applesauce and mix. Alternate adding the wet and dry ingredients to mixer on medium speed, do this in thirds. Mix until combined. Do not over mix. Your batter should be thick and silky. Transfer into prepared loaf pan and top with cinnamon sugar mixture. Bake for 35-40 minutes until done. Cool completely or enjoy a piece warm with butter.
